According to the Food Standards Agency (FSA), washing raw chicken can lead to a potentially dangerous form of food poisoning caused by Campylobacter bacteria, with contaminated droplets of water likely to spread the bugs on to work surfaces, clothing and cooking utensils .

Campylobacter is responsible for most cases of food poisoning. The USA estimates that more than 2 million people are affected by Campylobacter each year, and four out of five cases are caused by contaminated chicken.
A single drop of juice from raw poultry can have enough Campylobacter in it to infect a person! The National Antimicrobial Resistance Monitoring System (NAMRS) reported that Campylobacter was found on 47% of raw chicken samples bought in grocery stores tested POSITIVE for Campylobacter .

“While most cases result in people suffering from abdominal pain, severe diarrhea and vomiting, some cases can lead to more significant health problems” – the Food Standards Agency said.
Although the symptoms from poisoning last for about a week but the bacteria can be fatal, especially for kids less than 5 years of age.
Prevent Campylobacter Poisoning
1. Cover raw chicken and store it at the bottom of the fridge so juices cannot drip on to other foods and contaminate them with food poisoning bacteria such as campylobacter.
2. Cooking will kill any bacteria present, including campylobacter, while washing it can spread germs by splashing.
3. Thoroughly wash and clean all utensils, chopping boards and surfaces used to prepare raw chicken. Wash hands thoroughly with soap and warm water after handling raw chicken. This helps stop the spread of campylobacter.
4. Make sure chicken is steaming hot all the way through before serving. Cut into the thickest part of the meat and check that it is steaming hot with no pink meat and that the juices run clear.
