Growing up I loved poems. I would sit in my room and write poems for hours on end. I had books and diaries full of them. They were bad to say the least but they served a purpose at the time.
I spent much of my youth with my Gran. She liked poems too. Simple ones, ones that I understood, ones that we could share. Her favourite (one that she told me countless times) and wrote in many of my little books has become my favourite. It still often plays in my mind.

Two things stand like stone,
Kindness in another’s trouble,

My daughter also loves poems, again the simple ones. Her favourite is this –
To wake up in the morning,
and always see the sun,
no matter what the weather,
your glad the days begun,
because there’s a certain someone,
who turns the grey skies blue,
and in my case that someone,
I’m glad to say is you.
I cannot tell you where that one comes from; I learnt it when I was very young. Now that I am a Mum we change the final ‘You’ to ‘Lu’ and my daughter thinks this is great, a poem just for her.
Lemon Bliss Balls
1 cup raw cashews
1 cup desiccated coconut
zest of one large lemon*
juice of half a lemon (optional)
1/2 teaspoon concentrated natural vanilla extract
pinch of salt
2 tablespoon maple syrup
extra desiccated coconut for rolling in
* double the lemon if you like a bit more tang.
Place the ingredients into your processor in the order listed above and pulse at high speed until the mixture is smooth and the nuts and coconut have broken down. Using your hands shape the mixture into balls. Roll in coconut and place in the fridge to firm up a little. Eat and enjoy!!!
Note – Try not to over blend the mixture if you are using a high powered processor or you may end up with a butter as opposed to a mix you can roll into balls.
