STEAMED CREAMY LECHE FLAN
STEAMED CREAMY LECHE FLAN Ingredients: 12 egg yolks ( from large egg ) 1 big condensed milk ( preferably use branded one to attain the creaminess of the flan ) 1 big evaporated milk ( better brand also ) white sugar to caramelized 1 lemon to be extracted and get the juice or 1 tsp vanilla essence PROCEDURE FOR THE CARAMEL: in a llnera or molder place at least 3 tbsps of white sugar and set over stove in very low fire to avoid burning of the sugar. using tongs move llanera repeatedly until sugar is melted and turn into gold. continuously swirl the llanera to make sure that the caramel is evenly melted and distributed on the bottom of mold. remove from fire and let it cool. PROCEDURE FOR THE FLAN get a bowl and crack the egg and get the egg yolks only. add the condensed milk and evaporated milk and lemon juice or vanilla essence. gently stir in a circular motion until well blended. (prepare another bowl to place the strained mixture) using cheesecloth, strain the egg and milk mixture twice to attain the smoothness of the flan. pour in the mixture in llanera and cover with aluminum foil and steam for 45 mins. or insert a toothpick in the middle to check if it's already done. if the toothpick comes out clean remove from fire and let it cool before putting in the refrigerator for 15 to 20 mins. before transfering into serving plate gently pass the edges with a knife and turn over a serving plate on caramel on the top.. *** to attain the smoothness of the flan do not beat the mixture and just do the circular motion in mixing to prevent bubbles and always use a cheesecloth to strain 2x before pouring in the molds.
