EXPERT OPINION Mapping Public Health Benefits of Adequate Omega-3 Levels Thu Aug 11 21:00:00 CEST 2016

By Manfred Eggersdorfer Professor for Healthy Ageing University Medical Center Groningen (UMGG) and Senior Vice President of Nutrition Science and Advocacy at DSM A new global omega-3 status map[1] indicates that adults in most regions of the world have a low to very low status of omega-3 polyunsaturated fatty acids (PUFAs), particularly EPA and DHA. The first analysis of its kind, it is hoped that the findings can be used when developing both national and global guidelines regarding omega-3 intake. A global understanding of omega-3 levels The map is part of a new structured review, published in Progress in Lipid Research. It was created by analyzing 298 studies of EPA and DHA levels in the bloodstreams of healthy adults across the world, identifying which regions are more at risk of chronic illness. Regions classified as having very low EPA and DHA blood levels (<4%) included North, South and Central America, Central and Southern Europe, the Middle East, Southeast Asia and Africa. The Sea of Japan, Scandinavia and regions with indigenous populations or populations who have not adopted Westernized food habits were classified as having high status of EPA and DHA (>8%). The regions with a higher omega-3 status, such as Scandinavia and the Sea of Japan, tend to consume a larger amount of fish than other regions, and often a lower amount of omega-6 fatty acids from vegetable oil sources. The regions with low omega-3 levels are widespread – particularly in the Western world. It may not only reflect their dietary habits, but also consumer attitudes towards supplementation. Public health implications As stated by the World Health Organization, non-communicable diseases are estimated to be the cause of death of approximately 38 million people worldwide every year.[2] Omega-3 fatty acids (EPA and DHA in particular) have long been associated with decreased risk of cardiovascular conditions[3] and cognitive decline[4]. The paper highlights that a significant proportion of the population are at increased risk of non-communicable diseases due to low omega-3 status. A strong case for health authorities There is now a strong case for health authorities to issue recommendations relating to omega-3 and reduction in the risk of experiencing cardiovascular disease (CVD) and cognitive decline. It is also hoped that this will lead to other recommendations in this area, such as a healthy diet and increased physical activity. Heat a cooking pot then put in the butter and let it melt. Add the evaporated milk, condensed milk and sugar, vanilla extract then stir well. Place soup bones in a large shallow roasting pan. Roast about 45 minutes or until browned, turning once. Place soup bones in a 10- to 12-quart stockpot. Pour the 1 cup water into the roasting pan and scrape up browned bits; add water mixture to pot. Add the remaining ingredients. Bring to boiling; reduce heat to low. Gently simmer, covered, 8 to 12 hours. (For a gentle simmer, you should see tiny bubbles coming to the surface. You will want to monitor cooking so it does not boil. Gentle cooking helps to draw out and develop the flavor of the broth.) Remove soup bones from broth. Scoop out as many vegetables as you can with a slotted spoon. Strain broth through 4 layers of 100-percent-cotton cheesecloth placed in a colander. Discard vegetables and seasonings. If using the broth while hot, skim fat. Or chill broth in a bowl at least 6 hours; lift off fat with a spoon. Place broth in airtight containers. Cover and chill up to 3 days or freeze up to 6 months. If desired, when bones are cool enough to handle, remove meat. Chop meat; discard bones. Place meat in airtight containers. Cover and chill up to 3 days or freeze up to 3 months. My first reaction was, “No way!” But the Israelis in the meeting eagerly said, “You can plant a million olive trees… a plan to help make Israel economically independent… You can do this!” My answer again was, “No… this is not for me.” And then I felt the prompting of the Lord to step outside of our meeting place. He then began to show me a vision of a blue and green globe, and said, “Do you see all of those little green spots? I planted all of those without your help.” That was when My Olive Tree began… and it has since grown and is still growing! Today, through the help of thousands of people around the world, we have planted over 20,000 partner sponsored olive trees throughout Israel—a far cry from the HUGE vision of one million—but we are diligently moving forward to reach that goal! When My Olive Tree first began sponsoring olive trees, we planted in the Galilee area. It was exciting to see the vision unfold and for our partners to LITERALLY take root in the Holy Land! And then a few years later the opportunity became available to expand our efforts and begin planting in the Negev Desert. Ukoy Recipe or Okoy, a Filipino style Shrimp Fritters

How to cook Ukoy or Okoy Ukoy or Okoy Recipe is a delicious dish that is very popular in the Philippines, it is an easy to cook and very flavorful Filipino appetizer. Ukoy is prepared with whole small shrimps with head and shell on, mixed in flour, cornstarch and egg batter and deep fried until crispy. Other places in the Philippines has created their own variation of Okoy or Ukoy. Some instead of using sweet potato as the main ingredient others use squash, papaya or togue. Ukoy is even more delicious if you accompany it with vinegar dipping sauce. Ukoy or Okoy Ingredients 1/2 cup medium sized shrimps, heads and skin removed ( use the whole shrimp if you have small ones ) 1 cup sweet potato ( Kamote ), thinly sliced or grated 1/4 cup carrots, grated or thinly sliced 1/8 cups green onions, thinly sliced 1/2 cup flour 1/4 cup cornstarch 1 egg, beaten 1/3 cup water 1 tbsp. fish sauce 2 cloves garlic, minced a dash of freshly ground black pepper 1 cup oil, for frying Vinegar Dip: 2 cloves garlic, minced 1 tsp. sugar 1/4 cup white vinegar 2 tbsp. Patis or Fish sauce 2 birds eye chillies, chopped Ukoy or Okoy Cooking Instructions Mix together in a bowl the flour, corn starch, egg, garlic, water, fish sauce and pepper. Mix it very well and make sure it’s free from lumps and set aside. Wash and peel the sweet potato and carrots then grate it but in you do not have a grater, slice thinly as you can. Then slice the green onions. Add the sweet potato, green onions, carrots and shrimp into the batter mixture and mix well. In a frying pan, heat oil just enough to deep fry 2 fritters at a time. Using a slotted spoon, scoop Vege-shrimp batter allowing excess batter to drip off and place in a pan like mini pancakes, frying each side until crispy and lightly brown. Once cooked, drain each Ukoy fritters on a paper towel to get rid excess oil. Prepare the vinegar dip by mixing all ingredients and mix well, transfer in small bowl and serve warm.

Food Safety»FATTOM - time to fight your enemies! FATTOM – time to fight your enemies! There are a few factors that contribute to the growth of microorganisms on food. If we are able to counter and prevent these factors, we are able to fight our enemies. Food Food Many microorganisms grow on food rich in protein (poultry, fish, dairy, eggs) and carbohydrates (cooked rice, pasta). These foods have a high chance of contamination and may give rise to foodborne illnesses. Action: Pay more attention to these categories of food. Acid Acid Low acid food (poultry, fish, dairy, eggs) are considered potentially hazardous. Action: Cook food at high temperature. Check expiry dates. Look out for dents, bulges, leaks or rust in low-acid canned food (luncheon meat, baked beans). Temperature Temperature Microorganisms grow fastest in the Temperature Danger Zone (TDZ) of 5°C to 56.7°C. This TDZ range includes room temperature as well. Action: Do not leave food at room temperature for too long (e.g. rice and starchy foods). Store foods at the correct temperature. Time Time After 4 hours, the microorganisms on the food may produce toxins that make the food unsafe for consumption. Action: Food should not be kept at the TDZ for more than 4 hours. Oxygen Oxygen Microorganisms require oxygen to grow. Action: Cover food at all times. Moisture Moisture Microorganisms grow faster in food with high water content (fresh poultry, meat, fish and raw eggs). Action: Ensure these foods are stored at the proper temperatures with reduced moisture. By understanding your enemies and what you can do to prevent them, you’ll keep your food and diners safe. When you've reached the point of too much corn on the cob, don't panic—your corn habit can get even better. Making homemade stock is easy and economical, and the stocks are packed with health benefits while they add amazing flavor to any dish. Stocks can be made in a large stock pot on the stove top or in a crock pot, require little culinary skill, and don’t need much attention. You can make a variety of stocks with herbs, vegetables, chicken, beef, fish, or any other meat you like. All are full of health benefits that you won’t find in commercially produced stocks. Health Benefits of Broth Throughout history, many traditional cultures have made broths with bones. Stocks are extremely healing and beneficial to everyone. As the bones boil, the minerals from the bones get pulled out into the water, creating a mineral-rich stock. Homemade bone broths are rich in calcium, magnesium, phosphorus and other trace minerals which are essential for optimum health. Because the minerals in broth are easily assimilated, consuming bone broths is a very easy way to get these minerals in your diet. Bone broths also contain glucosamine, chondroitin and gelatin — components that get extracted from the bones. These nutrients are very good for anyone with joint pain or arthritis. Meat and fish stocks made with bones are also very healing to the digestive system. They provide building blocks for the rapidly growing cells of the gut lining. Bone broths have a soothing effect on any areas of inflammation in the gut. This has been used for centuries as a digestive aid and a remedy for the digestive tract. Homemade Broth Saves Money Homemade broths provide many health benefits that commercially made stocks do not. And in addition homemade broths cost much less! A quart size container of organic chicken broth averages around $3.00. If you filled a 5-quart crock pot with commercial stock, you’re looking at $15.00! Compare that to the homemade stock I made last night from half an organic chicken that cost me $5.99. That’s half the price of commercial — and don’t forget how much more healthful homemade stock is! Here’s another cost savings. After making and eating homemade broth for awhile, you may find less need to buy supplements. (Remember, the broth contains lots of minerals plus glucosamine, chondroitin, and gelatin.) How to Make Homemade Broth Making homemade broth is so easy. You can make this wonderfully healing food with few ingredients and little time and effort. My crock pot is almost like a permanent fixture on the counter. I have a broth cooking in it most of the time. To make life easy, freeze containers of stock in small portions ready for use in recipes. It is great to have a lot of stock on hand in the freezer for making soups, beans, rice, sauces, gravies and lots more. What you need: Bones (meaty is fine) from chicken, turkey, beef, fish, or any other kind of meat — including joints, giblets, and/or organs apple cider vinegar filtered or pure water salt and pepper to taste a strip of kombu seaweed (optional for added trace minerals) vegetables (optional for flavor and added nutrients) herbs (optional for flavor and added nutrients) garlic cloves (optional for flavor and added nutrients) Place the meat, bones and parts into a large crock pot or stock pot. Add 1 to 2 tablespoons of apple cider vinegar to the pot. Fill the pot the rest of the way with filtered or pure water. Optional: add any vegetables, fresh or dried herbs, cloves of garlic (you can get creative here!) to flavor the stock. If using a crock pot, turn to low and let cook for 24 hours. If using a stock pot, bring water to boil and then reduce heat and allow simmering for a minimum of 8 to 24 hours. The longer you let it cook, the more health benefits you will receive in your stock. That’s it! This will last a few days in the fridge and 6 to 12 months in the freezer. What’s your broth/stock routine?
